POT#5 ELANEER PAYASAM

Elaneer Payasam/ Tender Coconut Kheer is an exquisite pudding from the southern states of India. This succulent dessert is generally prepared on special occasions and during celebrations.

The elaneer payasam is a simple but luscious dish made out of pulp and water of the tender coconut, milk, sugar, and coconut milk. 
Here is an easy recipe for making Elaneer Payasam at home.

Let us now check out the required ingredients to make the sweet. 

Ingredients:

       Tender coconut water    - 1/2 cup

       Tender coconut pulp      - 3/4 cup

       Milk                                    - 2 cup

       Coconut milk                    - 3/4 cup

       Sugar                                  -  1/4 cup

       Cardamom(crushed)       - 1 tsp

       Condensed milk                -  2 tbsp (optional)

       Nuts                                     -  2 tbsp (optional)



Procedure:

  1. Boil 2 cups of milk until it reduces to 1 1/2 cups.

  2. Now add sugar and boil until the sugar dissolves. Turn off the heat and let it cool completely.

  3. Coarsely blend the tender coconut pulp with the tender coconut water.

  4. Once the milk cools, add the coconut milk to it.

  5. Then add the prepared tender coconut pulp to it.

  6. Finally, cardamom powder to it, give a good stir.

  7. Refrigerate and serve it chill.

Tips and Tricks:

  1. For thicker kheer, you can substitute the milk with full-fat milk. 

  2. For more sweetness, you can add 2 tbsp of condensed milk along with the sugar.

  3. You can garnish the kheer with grated nuts or nuts roasted in ghee. 

  4. For an enhanced taste, refrigerate well for 2-3 hours before serving.

  5. You can also add saffron strands to enhance the flavor of the dessert.
