POT#26 POTTUKADALAI BURFI (ROASTED BENGAL GRAM)

Let us now check out the required ingredients.

Ingredients:

Pottukadalai            - 1 cup
Sugar                      - 3/4 cup
Ghee                       - 1/2 cup + 2 tbsp
Water                      - 1/2 cup
Nuts                        - 2 tbsp (roughly chopped)
Cardamom powder - 1/8 tsp

Procedure:

  1. Grind pottukadalai and few cashews into a fine powder.

  2. In a pan, add a tbsp of ghee and roast the powdered pottukadalai for about 30 seconds.

  3. In a mixing bowl add the roasted flour and 1/2 cup ghee. Mix well until no lumps exist.
  4. To make sugar syrup, add 3/4 cup sugar and 1/2 cup of water.

  5. Allow it to boil until you get single string consistency.

  6. Lower the flame and add cardamom powder.

  7. Add the flour mixture into it and mix it well.

  8. Keep on stirring, add 1 or 2 tbsp ghee to it.

  9. Once you get a glossy appearance, turn it off.
  10. Pour it into a greased container.

  11. Spread out some chopped nut over it, give a gentle press.

  12. Now cut into slices and allow it to cool for few minutes.

  13. Break into pieces and is now ready to serve.

Tips and tricks:

  1. Adding cashew while grinding pottukadalai gives a rich taste to the burfi. 
  2. Roasting the flour is just to enrich the aroma and flavor.
  3. Mixing the ghee with pottukadalai flour in prior will prevent lumping of flour while making burfis.
  4. Adding ghee while stirring the burfi will make the burfi softer.
  5.  The burfi will set in no time, it takes 3-5 minutes to get set. So slice it immediately once you pour the mixture into the greased container.
