POT#14 KOZHUKATTAI/ MODHAK/ STUFFED RICE FLOUR DUMPLING

Kozhukattai is a traditional dish from the southern states of India. This sweet is generally prepared on festivals as an offering to the almighty. The dumpling is made from the rice flour and stuffed with a mixture of grated coconut and jaggery.

People give variation in stuff, by using sweet sesame powder, spicy urad dal mix instead of jaggery and coconut mixture.

Let us now check out the required ingredients.

Ingredients:

Rice dumpling:
         Raw Rice               - 1/2 cup
        Sesame oil             - 2 tbsp
        Water                     - as required 
Stuffing:
         Water                       - 2 tbsp
        Grated coconut       - 1 cup
        Powdered jaggery   - 3/4 cup
        Ghee                       - 2 tsp 
        Cardamom powder - 1/4 tsp

Procedure:

Stuffing:
  1. In a pressure cooker, add 2 tbsp of water, and spread a cup of grated coconut in it.
  2. Add 3/4 cup of jaggery, 2 tsp of ghee and 1/4 tsp of cardamom powder.
  3. Turn on the flame, pressure cook for 2 whistles in high flame. 
  4. Turn off the flame and release the pressure. Fluff up and allow it to cool.

Rice dumpling:
  1. Wash and soak the raw rice minimum for 1 hour.
  2. Grind it smooth to a dosa batter consistency.
  3. In a pan, add a tbsp of oil and pour the batter to the pan.
  4. Switch on the flame, keep on stirring the mixture in a medium flame.
  5. Stir until u get a soft non-sticky dough.
  6. Turn off the flame and keep the dough closed for few minutes/ until it cools down slightly.
Kozhakattai:
  1. Grease your hands with oil.
  2. Take a small portion of the dough and make it to a ball.
  3. Flatten the ball to a circular shaped disc.
  4. Place the prepared stuffing in the center.
  5. Now pleat the edges and gather it in the center.
  6. Repeat the same procedure.
  7. Place it on the idly plate and steam it for 5 minutes on high flame.
  8. Tasty kozhukattais are now ready for offerings

Tips and Tricks:

  1. Stir the dough continuously, else it may get burnt.
  2. Cook the dough in low- medium flame.
  3. Stir till the dough gets non-sticky, else the kozhukatta may get sticky too. 
  4. Do the stuffing carefully, as the dough could break while closing the dumpling.
  5. Grease the idly plates with oil before placing the kozhukattai.
