Thavala adai is a traditionally healthy dish from the state of Tamil Nadu, India. This tasty spicy dish's major ingredients are the state's staples, rice and lentils. It is highly rich in protein, fiber, and complex carbohydrates. The coconut gratings give out an enhanced flavor to the dish.

Preparation

Ingredients:
Raw rice - 1 cup
Parboiled rice - 1 cup
Urad dal - 1 tbsp
Channa dal - 1 tbsp
Toor dal - 1/4 cup
Coconut grated - 1/2 cup
Dry red chili - 8
Asafoetida - 1/4 tsp
Mustard - 1/2 tsp
Oil - 3 tbsp
Curry leaves - few leaves
Salt - 1/2 tsp
Procedure:
Along with dried red chilies and salt grind the rice and dal to a thick coarse batter.
In a small pan heat oil, add mustard and allow it to splutter, later add asafoetida and curry leaves.
Now add the grated coconut to the batter, also add the prepared tempering to it.
Heat a small Kadai and add a tsp of oil to it. Now a ladle full of batter to the Kadai.
Close and cook for 2-3 minutes. Now turn over the adai, close, and cook for another minute.
It turns crispy and is now ready to serve.
Tips and Tricks:
Cook the adai in medium or low flame.
Check the adai is completely cooked by inserting a toothpick or a fork.
You can adjust the spice as per your taste.
The addition of chopped onions to the batter intensifies the taste of the dish.
It tastes great when served hot.
Finally, it can be served along with different varieties of chutneys.
