POT#13 PAN COOKIES

Make your own crispy cookies for your choice of taste at home that too in a pan. Looking for a cookie recipe for your kids and family for their snack time? 
This requires neither oven nor a pressure cooker. It also requires no raising agent and nothing apart from the very few common ingredients available at home. You can make it more healthy and crunchy by adding nuts. 
Here goes the easy recipe for the crusty pistachio cookies.

Let us now check out the required ingredients.

Ingredients:

    Wheat flour                              - 3/4 cup
    Gram flour                               - 1/4 cup
    Powdered sugar                      - 2 tbsp
    Ghee                                        - 1/4 cup
Pistachio Flavor
  Coarsely Powdered pistachio - 1/4 cup
     Ghee                                      -  1 tbsp

Procedure:

  1. In a mixing bowl, take the wheat and gram flour.
  2. Now add the powdered sugar and coarsely powdered pistachio.
  3. Now add the ghee to the mixing bowl.
  4. Gently mix and knead until you get a dough-like texture.
  5. Now take a small portion of the dough and shape it as you desire.
  6. Shape the remaining dough.
  7. Now take a wok or a frying pan, brush well with ghee/oil, place the shaped dough in the pan.
  8. Place a Tawa on the medium flame, position the pan over the Tawa.
  9. Close the pan and cook for 20-25 minutes. Switch off the flame, and let it stay on the Tawa for a while or until it cools down, this allows your cookies to turn crispy.
  10. Enjoy the crispy cookies with your cup of coffee/tea.

Tips and Tricks:

  1. If you don't get a dough-like consistency, add some more ghee and knead.
  2. Brush the frying pan with a surplus amount of ghee/ oil.
  3. Cook on medium flame, check once after 15 minutes. See to that you don't burn the bottom of the cookies.
  4. You can very well replace the powdered sugar with caned sugar/powdered jaggery.
  5. The cookies can be stored in an airtight container for a week.
  6. You add artificial/natural coloring for a colorful cookies 
  7. You can give a twist to the ingredients by trying out different flavors of your choice such as chocolate, orange, pineapple, vanilla, almond, or just plain cookies.
