Ingredients:

Grated coconut - 1 cup
Pitted dates      -  1/2 cup

Procedure:

  1. Heat a pan and add the grated/ shredded coconut in the pan.
  2. Saute the shredded coconut in low heat.
  3. Dry roast it well without browning until the moisture is removed from the coconut.
  4. In a blender, take 1/2 cup of pitted dates.
  5. Along with the dates add the dry roasted coconut. Blend well.
  6. Transfer it to a bowl, it will have a dough consistency, gently knead it.
  7. Now take a small portion of it and roll it into logs.
  8. Now coat well with the roasted coconut. Repeat this process.
  9. Enjoy the tasty healthy coconut logs.

Tips and Tricks:

  1. You can very well replace the shredded coconut with desiccated coconut, it requires no roasting and can be used directly to blend.
  2. Dry roast the coconut only until the moisture is removed, don't overdo.
  3. Roasting the coconut helps in a better texture and a good shelf life.
  4. You can also use the shredded coconut, but it gives a bit soggy texture and is advisable to consume within that day.
  5. You can also dry roast the coconut in the oven.
  6. You can store your coconut logs in an airtight container up to 3-5 days in the refrigerator.
  7. You can add chopped nuts for a crunchy coconut log.
