POT#24 CARROT SACCHARINE

 Carrots are highly rich in alpha and beta carotene and are a good source of vitamin K and vitamin B6. Beta-carotenes are partially metabolized into vitamin A, this protects our eyes from the sun and lowers the chances of cataract and other eye problems. The dietary fiber in the carrots helps in digestion, it also improves the functioning of the liver and kidney. Consuming carrots regularly gives out glowing skin, good eyesight, and healthy teeth. It regulates blood pressure, reduces incidences of stroke, and maintains a healthy heart.

Let us now check out the required ingredients.

Ingredients:

Carrot         - 1/2 kg
Corn flour   - 3 tbsp
Water         - 1 1/2 cups
Sugar         - 1/2 cup
Nuts           - 1/4 cup (roughly chopped)  
Food color - 1 drop (optional)

Procedure:

  1. Wash, peel, and cut the carrots into slices.

  2. Allow the carrot slices to get cooked in 1 1/2 cups of water.

  3. Once it is cooked, transfer the carrot slices alone into a blender. Save the stew for later usage.

  4. Blend the cooked carrots to a smooth paste.

  5. Transfer the carrot puree into a pan.

  6. Add 1/2 cup of sugar to it.

  7. In the 1/2 cup of the saved stew, mix 3 tbsp of cornflour.

  8. Now pour the cornflour mixture into the pan.

  9. Add the roughly chopped nuts into it.
  10. Stir well, cook it on medium flame.
  11. Keep stirring until it thickens.

  12. Now pour this mixture into a greased container.

  13. Cover the container with a foil sheet and allow it to set for  6-8 hours or overnight in the refrigerator.

  14. Once it is completely set, slice it into pieces.

  15. Healthy dessert is now ready to serve.



Tips and tricks:

  1. Cook the carrots well, else it gives out a raw taste.
  2. Adjust the sweetness as you desire.
  3. Adding food color would give brighter look to the food, and is completely optional.

  4. Do not add excessive water, as it might not help the dessert to set properly.
  5. Wait patiently until it gets completely set, else it will break off and cannot be sliced.
