POT#12 HUMMUS

Hummus is a dip/spread from the Middle East. It is a great accompaniment with Falafel, cooked eggplant, tortillas, and many starters and fries that you make at home, also used as a spread for pita bread, and sometimes as pizza toppings.  
'Hummus' in Arabic stands for 'chickpeas'. Thus it is a healthy and easy homemade dip made out of chickpeas blended together with tahini, garlic, and lemon juice. It is basically an excellent source of dietary fibers, vitamin B6, and many other dietary minerals.
Here goes the homemade recipe of the healthy dip, Hummus.

Let us now check out the required ingredients.

Ingredients:

Tahini paste:
    Sesame seeds    - 1/2 cup
         Vegetable Oil      -  4 tbsp   
         Salt                     -  as required


Hummus:
    Chickpeas           - 1/2 cup   
         Tahini Paste        - 2 tbsp
         Garlic                  - 2 cloves 
         Lemon juice        - 2 tsp 
         Oil                       - 2 tbsp
         Salt                     - as required
         Red Chili powder- 1/2 tsp (optional) 

Procedure:

  1. In a wok, dry roast the sesame seeds until it turns golden brown.
  2. Now transfer it to a blender and blend well.
  3. Now add 4 tbsp of oil to it in 2 intervals and required amount of salt to it.
  4. Blend well until it turns to a paste. Your tahini paste is ready.
  5. In a pressure cooker, cook the overnight soaked chickpeas for 4-5 whistles.
  6. Once it cools down, transfer it to a blender along with garlic cloves.
  7. Blend it well. Now, add a tbsp of oil, lemon juice, salt, and tahini paste, and blend again.
  8. Transfer it to a bowl and add a tbsp of oil to it. 
  9. Sprinkle a tsp of red chili powder(optional) and is now ready to serve along with Falafel.

Tips and Tricks:

  1. Dry roast the sesame seeds well to get a smooth tahini paste.
  2. Tahini paste, as well as the hummus, has a shelf life of 3 months, it can be refrigerated in a glass container.   
  3. If you are likely to store, add a good amount of oil to hummus as it acts as its preservative.
  4. You can enhance the flavor of the hummus on adding mixed herbs to it.
  5. Try it out with Falafel.
